Sweet Chilli & Lime Chicken



This is another reason why I adore Donna Hay...she always provide simple and fast food too cook, not many -and confusing- ingredients; I can cook good food for dinner with all supplies I had on my fridge and pantry. No fuss. Great taste.

I got this recipe from newest Donna Hay magazine.

If you like to try, you will need:
1/4 cup sweet chilli sauce
1 tablespoon lime juice
2 chicken breast fillet (approx 400grams); cut into half
1 tablespoon olive oil
1 fresh long chilli, discard the seed, julienne
1 cucumber. finely sliced or julienne
2 stalk of spring onion, finely sliced or julienne

I feel like eating greens, so I add about 50gr of French beans -this is not on the original recipe-

How to:
Mix sweet chilli sauce, lime juice and olive oil on mixing bowl, marinated chicken with the mixture, set aside for at least 30minutes.
Boil a saucepan of water, put the French beans once it's boiling for 1minutes, take them out and place on bowl of cold/ice water to stop the cooking process.
Grilled marinated chicken on BBQ or grilled pan for about 4-5 minutes, turn once.

Serve with Jasmine rice.
